Okra IceCream (yes really!)



Looking at all the okra I had harvested and the quart jars of cream in my fridge from our goat milk, an idea was launched. I had to try it. It turned out pretty darned delicious but you might have to try it for yourself.


Ingredients:

12-15 okra pods, stem end removed, cut in half lengthwise, seeds removed

1 cup whey from cheesemaking (or water if you haven't made cheese recently)

2-3 cups cream

½ cup sugar


Method:

  1. Place the okra pods in a saucepan and cover with the whey or water. Bring to a boil and then simmer for 4 mins.

  2. Process the okra and liquid in a blender until smooth.

  3. Chill overnight.

  4. Next day, combine okra, sugar and cream in your ice cream maker and process according to its directions, until done. Freeze what you don't eat immediately.

Tip: To keep homemade ice cream soft and easy to scoop you can add a tablespoon or two of vodka to the mix. The alcohol doesn't freeze and it helps to keep it from freezing as hard.
