Ingredients:


1 cup milk (cow, goat, or coconut milk will work)

1 tablespoon kefir grains

Instructions:


In a clean glass jar, combine the milk and kefir grains. Stir gently to combine.


Cover the jar with a cheesecloth or coffee filter and secure it with a rubber band.


Place the jar in a warm spot in your kitchen, away from direct sunlight. The ideal fermentation temperature is around 68-72°F.


Allow the mixture to sit for 24-48 hours, depending on the desired level of tanginess. The longer you let it ferment, the tangier it will become.


After the fermentation process is complete, strain the kefir through a fine-mesh sieve or cheesecloth to remove the grains.


Transfer the kefir to a clean glass jar or bottle and store it in the refrigerator. It will last for about a week.


To use the kefir grains again, simply rinse them with cool water and add them to a new batch of milk.
