IF YOU HAVEN'T HAD FRESH RAW GOAT'S MILK, YOU ARE MISSING OUT!
When I tell people I raise dairy goats, the response is almost always the same: “I tried goat milk once but”….and then theY lean in to whisper “it tastes too strong” ( or “goaty”).
That shouldn’t be the case!
Goat’s milk is light, sweet, clean, and fresh tasting. There shouldn’t be a goaty, musky, or “off” flavor whatsoever. I can’t count the number of times I’ve urged someone to try my milk and watched the look of astonishment on their face as they exclaim “but it tastes just like regular milk, only better”.
SO, WHERE DOES THE MYTH ABOUT GOAT'S MILK TASTING DISGUSTING COME FROM?
Well, for starters, there are some things that can alter the taste of goat’s milk. Goats have very specific mineral needs and a mineral imbalance will affect the flavor of the milk.
Another reason is the way it is handled after milking.
WHAT WE DO TO KEEP RAW GOAT’S MILK FRESH AND DELICIOUS
We ensure our goats have a well-balanced diet that includes free choice access to loose minerals. This keeps them healthier – and their milk tasting sweet and delicious.
We milk into a CLEAN Seamless Stainless Steel Can. The can is cleaned thoroughly after each milking, first with cold water, because warm water can cook the milk onto the surface and result in build up over time. After the rinse with cold water, we use hot, soapy water to thoroughly clean it and then allow it to air dry.
Filter the milk as we are milking. We use disposable milk filters and a stainless steel strainer to hold the filters, and the strainer sits in the opening of the milk can, filtering it as we work. Our milk remains pure straight from the teat.
Chill the milk immediately and keep it at 34 degrees. According to Mark McAfee of Organic Pastures Dairy, to make raw milk last a long time, be sure not to break the “cold chain”.
Store the milk in GLASS jars. Glass is the best option for storing raw milk as it can be thoroughly cleaned and does not absorb odors and flavors the way plastic does. We use Ball canning jars in quart and half-gallon sizes.
